Kolkata Beef Curry

My brothers beef curry recipe took me straight back to my trip to India. Bursting with fresh flavours and warming to the tummy and soul.




Ingredients

Pinch Salt

1 tbsp Chilli Powder

2 tsp Ground Coriander

1 tsp Ground Black Pepper

1.5 tsp Ground Turmeric

1 tsp Ground Cumin

1 litre Whole Milk (of your choice, I use cows milk)

1 kg Braising Steak

125g Ghee or 2 tbsp Vegetable Oil

2 Onions

5 Garlic Cloves

7cm piece Fresh Root Ginger, thinly sliced

2 tsp Garam Masala


Method

  1. Trim the fat from the beef and dice into 3.5 cm cubes.

  2. In a large bowl, mix together the salt, chilli powder, coriander, pepper, turmeric and cumin. Then stir in the milk.

  3. Add the beef cubes into the bowl and coat in the spice mixture until they're evenly coated.

  4. Heat the ghee / oil in a large, heavy based saucepan, add the onions, garlic and ginger and fry gently for 4-5 minutes. Add the meat to the pan and fry gently over a moderate heat, turning constantly until the meat is evenly browned.

  5. Reduce the heat, add the milk and spice mixture, cover the pan, and cook very gently for 1h 30mins to 2 hours until the beef is tender and the sauce reduced. Note, try not to boil the milk as it will split, its still fine to eat if it does split, but it looks a little less appetising.

  6. Just before serving, add the garam masala and boil off any excess liquid to make a thick sauce.

  7. Serve with rice and a chapati, enjoy!


 

Good to know:

  • Swap the milk to your preference!

  • Dairy with a higher fat content is less likely to curdle when cooked.

  • If you can't get hold of braising steak, use diced stewing steak and top up the liquid in the pan with water to cover the stewing steak if necessary.
